自助餐(can)英文為(wei)Buffet ,原意是(shi)冷餐(can)會,酒會。二(er)次大(da)戰時,自助餐(can)形(xing)式被(bei)廣為(wei)引進入美軍后(hou)方駐(zhu)地的軍用食(shi)堂,其(qi)內容已大(da)大(da)超出酒會的小食(shi)范(fan)疇,發展(zhan)成(cheng)主食(shi)、甜品、熱湯等供挑選的就餐(can)形(xing)式。
冷餐與(yu)自助餐的(de)形式基本相同(tong)。冷餐基本上以(yi)格調高雅、風(feng)味獨(du)特的(de)冷菜、飲料、低度(du)酒為(wei)主(zhu),并非以(yi)進餐為(wei)主(zhu)要目的(de),它通(tong)常適(shi)用(yong)于招(zhao)待會(hui)、新聞發布會(hui)等。
